Mclean Louisiana Gumbo

Ingredients:

1 package of Mclean Turkey kolbassa (or grillers)

¼ cup organic white or whole wheat flour

2 tbsp. olive oil

1 medium onion, chopped

1 red pepper, diced

1 stalk celery, diced

4 cloves garlic, diced fine (or pressed)

1 cup of organic vegetable stock (diluted with 3 cups water)

1 can drained diced tomatoes (14 oz can)

1 cup of okra pods cut into ½ inch long pieces

½ tsp ground black pepper

¼ tsp dried thyme

¼ tsp dried oregano

1 bay leaf

1/3 cup long grain white rice

1 cup medium shrimp peeled

1 cup chopped chicken breast or thigh (boneless)

Louisiana hot sauce or Tabasco to taste

 

Instructions:

1.      Slice Mclean turkey Kolbassa or grillers

2.      Make a roux by heating oil in a frying pan on low heat and adding flour (stir while cooking until mixture turns light brown). Add more oil if needed.

3.      Transfer to bowl and let cool

4.      In a stock pot add oil, onions, peppers, celery and garlic (sauté 7 minutes).

5.      Stir in vegetable stock, tomatoes, okra, pepper, thyme, oregano, cayenne and bay leaf.

6.      Cover and cook for 15 minutes

7.      Stir in rice and cook for another 15 minutes

8.      Add shrimp, chicken and turkey Kolbassa

9.      Add roux, spoon in until desired consistency is achieved

10.  Cover and turn on low heat for an additional 5 minutes or until meat and rice are done.

11.  Discard bay leaf and serve with hot sauce
