Recipe for chorizo chickpea stew:
1 can of chickpeas (rinced)
1 medium onion (chopped finely)
2 cloves of garlic (minced)
2 MCLEAN Chorizo sausages (chopped)
2 cups of cherry tomatoes (leave whole)
1 medium peeled and finely chopped potato
1/2 cup Parsley
Salt & pepper (to taste)
2 cups chicken stock
Notes: Fry onions, garlic and chorizo together until onions are cooked through. Then add all other ingredients and bring to boil for 5 minutes. Simmer on low for 10 minutes. Serve with parsley as garnish.
